Chocolate Pie for Candise

1 Cup Sugar, heaping
2 Cups whole milk
3 eggs, divided
3 TB cocoa, i add extra
3 1/2 TB flour all purpose
Large pie crust, prepared

Mix your dry ingredients in a medium sauce pan. Mix until well blended. This cuts the cocoa and flour up
so it mixes well when put with the milk and eggs.
In a bowl mix milk, 3 egg yolks, mix with fork or whisk until egg is well blended.
Add the milk/egg mixture to the sauce pan, dry ingredients, mix with whisk.
Start to cook this slowly, dont want to put this on a hot stove top, maybe on med low.
After it starts to slowly heat up then turn the eye up to medium and stir continuously.
It will start to thicken. When thick, but just before pudding stage, take off and pour into
prepared pie crust.

Meringue-  Beat the 3 remaining egg whites until very stiff. At the end add 2-3 TB of sugar.
Continue to beat until forms peak.  Spread on top of pie and bake at 400 until the meringue
has lightly browned.  (i add cream of tartar to my egg whites, it helps the meringue to be really
stiff and makes the presentation nicer)  this is optional.
